Lighting to sell: the use of LED lighting in the food industry

There are a number of essential elements to consider when lighting supermarket stalls. On the one hand, bright, crisp lighting gives the impression of being in an open-air market. Furthermore, a bright appearance of fruits and vegetables increases the sense of quality and attracts more customers.

The choice of LEDs is correct because this technology does not emit infrared light and produces very little heat. LED technology also prevents premature aging of fresh produce.

Then it is better to choose an LED light equipped with a special lens or filter. Thus, green, yellow and red will be highlighted to make the food more appetizing, resulting in a shelf enhancement.

Color temperatures

the color of the light influences our perception. It even has an effect on the human body - the effect of color waves is used in chromo therapy, for example. This is why we pay special attention to ensuring that the color temperature of shop lighting is optimal.

Here we are talking about different shades of white light (cold, natural and warm) and light not really colored like red, blue and green light.

Color temperature is expressed in Kelvin. The lower the Kelvin value, the warmer the light (red) and the higher the Kelvin value, the cooler the light (blue). Warm white light has a value of 2700 to 3000 Kelvin, cold white light has an average value of about 4500 Kelvin.

How to light up fruits and vegetables

the recommended color temperature for fruit and vegetables is between 3,000 and 4,000 Kelvin. With this lighting, good color reproduction is guaranteed.

Of course, not all vegetables react to light in the same way. A beautiful result is achieved with a high light intensity on salads and other leafy vegetables, because the bright green colors stand out. On the other hand, some products are light sensitive - usually underground vegetables (tubers) - such as potatoes, onions, asparagus, chicory, and mushrooms. These products should be kept away from light to prevent their quality from deteriorating.

Fish

we distinguish two categories: white fish and red fish. White fish brightens with cooler color tones. In cold white light, plaice, cod or sole look great. For red fish, such as tuna, we recommend the use of warm colored dyes. The objective will always be to highlight the natural colors of the products.

Red meat

to illuminate red meat, we recommend a warm white light (2700 to 3000 Kelvin) or a pink light, suitable to naturally highlight meat products. Leg of lamb, minced meat, fillets ... are much more attractive in this light that accentuates the red and fresh color of the meat. Under a cold light, which contains more blue tints, red meat would take on an unappetizing color that would even give it a dated look.

Cheese, bread and cakes

A slightly yellowish warm white light is suitable to illuminate the cheese. This light attracts attention and stimulates the appetite. A light with warm color tones also enhances the bread and accentuates the crisp appearance of the crust. However, avoid too hot a light as this gives the bread a dark brown color and loses its natural look.

In summary

in the display stands for fishmongers, bakeries, butchers and vegetables, a specific light is needed, so that the products look as similar as possible to their origin.

For example, cool white light reflected from crushed ice creates a suggestive "freshly caught" feeling. They replace the current fluorescent tubes saving more than 50% of energy. The LED tubes offer a better quality of light (brighter), they do not have flicker or ultraviolet radiation and they switch on immediately.
