Eggs in Bell Peppers & Onion Rings Are Pretty Tasty

This simple yet ingenious technique comes courtesy of The Apron Strings blog (via The Kitchn). Not only does the sliced bell peppers and onion rings make for simple ring molds, they also impart wonderful flavor to the egg. And did we mention how gorgeous they'd look on a plate?
The ring molds are a variation of the classic egg-in-a-hole concoction where you cook an egg in the middle of a slice of bread. Basically all you have to do is put 1/2 inch slices of the onion or pepper into the lightly-oiled skillet and crack an egg into the middle.
We all have that one friend who we don't really like, but keep around anyway for some kind of entertainment value. We hope that somehow, they will have one redeeming quality to continue existing on our friends list. But in truth, we're probably better off without them.
